These cute things showed up in the mail a couple of weeks ago! I'm training for a half marathon, so I wanted to do something healthier, but tasty and cute with these Wilton shapes.
Part 1: Making Healthy Carrot Cake
I found a carrot cake recipe from bakingbites.com and substituted 2 1/2 C. white whole wheat flour for all-purpose, and used 1/2 C. honey + 1 tsp. molasses instead of dark brown sugar.
I love baking with this boy! I legitimately let him stir the ingredients! He does a great job :)
I left the cake upside-down, so the shapes were flat when they were iced.
Part 2: Making Healthier Cream Cheese Frosting
Cream cheese, plain, nonfat Greek yogurt, vanilla, aaaand a little bit of powdered sugar. I used the recipe from eatingwell.com & increased the sugar from 1/2 C. to 3/4 C.
Who knew that the hospital cup would become so functional in the kitchen!
