I microwaved the Reese's mini chips in 30 minute intervals, and dipped half of the banana pops in the melted yumminess. I then placed them in the cute cups and ended up adding the "popcorn" to the tasty mix!

These cute things showed up in the mail a couple of weeks ago! I'm training for a half marathon, so I wanted to do something healthier, but tasty and cute with these Wilton shapes. Part 1: Making Healthy Carrot CakeI found a carrot cake recipe from bakingbites.com and substituted 2 1/2 C. white whole wheat flour for all-purpose, and used 1/2 C. honey + 1 tsp. molasses instead of dark brown sugar. I love baking with this boy! I legitimately let him stir the ingredients! He does a great job :) I left the cake upside-down, so the shapes were flat when they were iced. Part 2: Making Healthier Cream Cheese FrostingCream cheese, plain, nonfat Greek yogurt, vanilla, aaaand a little bit of powdered sugar. I used the recipe from eatingwell.com & increased the sugar from 1/2 C. to 3/4 C. Who knew that the hospital cup would become so functional in the kitchen! Homemade Strawberry Sauce for Waffles or PancakesThis is one of those things you should make at least once in your life! Homemade strawberry sauce?! So yummy and worth it! I absolutely love their website! I never have to worry about scrolling through the comments section to see if a recipe is good. Four ripe bananas and no eggs = my first vegan recipe to try! The bread has simple ingredients and was easy to make. I would recommend tin foil on top of the pan for the last ten minutes of baking, because it was a little brown on top. It's pretty moist and has a good texture, though! I may or may not have found a cinnamon honey butter recipe to go on top...! It's pretty much like stepping into Texas Roadhouse when you try the butter spread. My husband is going to flip when he tries it! I love trying new recipes! I'm so happy my first vegan recipe for bread was a success :) I don't have a computer right now, so the links to the recipes are in the comment section of the blog. I found my new favorite snack. The kind of snack my body appreciates! I am officially a fan of butternut squash! They taste like fries to me! I like them BETTER than fries, which is why I make them so often. Unfortunately and fortunately, I made a chipotle sauce to dip the fries in, and it's rather tasty. I thought I would share the simple recipes. Butternut Squash Fries Olive Oil Salt & Pepper Butternut Squash Preheat oven to 400 degrees. Peel the skin off of the squash and remove the seeds. Cut into wedges. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 20 minutes, or until easily pierced with a fork. If you want to be healthier than me, the baked squash really is tasty on its own. If you want a sauce with a hint of spice to it, here is a simple recipe. Simple Chipotle Sauce makes 2 servings 1/4 C. Ketchup 1 TBSP Kraft Chipotle Mayo 1/4 tsp. Vinegar Stir all the ingredients together and enjoy! I've wanted to have a waffle date with my husband for over a week now. Unfortunately, I couldn't wake up early enough to make it before he went to work! I finally decided to have waffles for an evening dessert. I found a couple of yummy recipes and revised them a little bit :) The waffle recipe was found on allrecipes.com. I made one change, though. I used white whole wheat flour instead of all-purpose flour. Have you heard of it or tried it? It has the same nutrition as whole wheat flour, but the flavor isn't overpowering. I use it instead of all-purpose flour in a lot of recipes! Have you ever made your own whipped cream? I just started. So worth it. We couldn't help ourselves. We used nutella, strawberries, whipped cream, AND syrup. Wow. I want to make healthy meals, but I also need to keep my grocery budget! I decided to try lentil soup instead of cooking meat for dinner. Lentils are high in protein and low in cost! I let my son play in the sink while I chopped the vegetables in the morning. When it was time for dinner, I threw my vegetables in the pot and it was an easy meal :) I made the following changes/substitutions:

Wait a second... what are you doing awake?! I woke up at 6:00 a.m. to finish baking before he woke up. He usually wakes up at 9:00 a.m. He "helped" with the pumpkin pie and took a nap for the rest of the baking :)
Did you want the recipe for rolls? Thanks to HowDoesShe.com, I have made these yummy rolls for three Thanksgiving Holidays! I refuse to buy store bought vegetable trays. They are over priced and BARELY contain any vegetables! Plus, it is easy to make your own tray that looks classy! The day after Thanksgiving, we used the bell peppers in a salad. I forgot to take pictures of the green bean casserole and cheese/cracker tray. It was a bit of a rush to get everything done!
