My Mother-in-law and I had fun baking for Thanksgiving! This post will show some of the recipes and ideas that we used.
The Day Before Thanksgiving:
- I made the pie crust dough first and let it chill in the refrigerator for a couple of hours.
- The dough is much easier to roll out after it has been able to rest for a bit.
- I then started making rolls. I followed all of the directions, until the dough rose for the first time.
- After rising, I split the dough into four sections. I wrapped three of them and put them in the fridge. I froze the fourth ball of dough for another day.
- WHAT I LEARNED: The yeast continues to grow in the fridge. So, the dough burst out of the plastic wrap. Next year, I will make the dough a couple days ahead of time, and put it in the freezer instead of the refrigerator.
- After the pie dough chilled for a couple of hours, I rolled it out and divided it into two pans.
- I used plastic wrap to cover the dough/pans to sit overnight in the refrigerator.
Thanksgiving Day
- The first thing I baked was the pumpkin pie.
- Did I mention that I found a CRACKLESS Pumpkin Pie recipe? Thank you, Chef John.
Wait a second... what are you doing awake?! I woke up at 6:00 a.m. to finish baking before he woke up. He usually wakes up at 9:00 a.m. He "helped" with the pumpkin pie and took a nap for the rest of the baking :)
- The apple pie required a bit more labor than the pumpkin pie, so mixes were made and apples were chopped while the pumpkin pie was in the oven.
- I used Gala and Granny Smith apples so the pie wouldn't be too tart. Each layer of pie had one of the two flavors, so as to balance every bite.
- While the Apple Pie was baking, we finished making the rolls.
- Pizza Wheel Cutters and dough are best friends. I couldn't make bread without them!

I refuse to buy store bought vegetable trays. They are over priced and BARELY contain any vegetables!
Plus, it is easy to make your own tray that looks classy! The day after Thanksgiving, we used the bell peppers in a salad.
